Pink Cava Extrem de Bonaval: Cava made by the traditional CHAMPENOISE method. Almendralejo wine region. White Wine from 100% Grenache grape varieties. Grapes in correct sanitary condition and complying with European regulations regarding non-permitted chemical substances.

Preparation: After filtration and stabilization of the base wine, the tirage liquor is added and the bottles are closed with crown caps, causing a second fermentation of the bottle. Once the 15 months established by the Cava Regulatory Council have passed, the bottles are removed on an automatic pallet, this by means of turning and tilting movements, moving the bottle from the rim position (horizontal) to the tip (vertical with the cap downwards) to drag the lees from the second fermentation to the neck of the bottle, leaving the cava clean for disgorging. This process begins with freezing the neck of the bottle, trapping the lees it has in an ice cap. Next, the crown cap is removed, extracting the lees from the bottles by the pressure that exists inside the bottle. The expedition liquor is added to obtain the desired sweetness and then it is covered with a cork plug and a wire mirrion. After disgorging, the outside of the bottle is washed and dressed for sale.
