Once the grapes are harvested, they undergo the process of sunning, that is to say, the sun-drying action, achieving with this technique an almost total loss of water, then being very difficult. fermentation, by then add alcoholic alcohols. This variety of sweet wine has a very high degree of concentration of sugars and the graduation ranges between 8 º and the 15 º. They are dense and concentrated wines, with colors ranging from mahogany to dark browns.

The expression of generous wines is due to the elaboration, aging and preservation techniques used. Mainly the aging of these generous wines are made in large barrels called soleras and criaderas, with a capacity between 540 liters and 640 liters and they are placed on top of each other in pyramidal form. The barrels that are in the base are the soleras that house the oldest wine and those that are above are the criaderas that contain the youngest wine. When bottling these generous wines , the wines of the soleras, the older ones are used and then these barrels are filled with the youngest wines coming from the barrels hatcheries. It is for this reason that the generous wines have no añada, as they are the product of the mixture of several years.
