The vinification of Dionus is a meticulous process that brings out the qualities of the grapes. After careful fermentation and maceration for three weeks to extract all the flavors and aromas, the young wine is transferred to French oak barrels, mostly new, where it will mature for 30 months. This barrel aging adds complexity and structure to the wine, allowing it to develop fully.

Venta D’Aubert: Conseguir ‘calidad superior’ respetando la naturaleza y aportando valor ecológico a la región.
La bodega se ubica en la Matarraña, provincia de Teruel, frente al majestuoso parque natural «Los Puertos de Tortosa-Beceite», uno de los parajes más bellos y desconocidos de España. El término "Venta" se refiere a los edificios que antiguamente estaban en los caminos que servían como lugares de descanso. La “Venta d’Aubert” está situada en la ruta histórica que une el Mediterráneo con el interior, la ruta de Tortosa-Alcañiz que llega hasta Zaragoza. Después de un largo sueño semejante al de Blancanieves, este caserío se despertó en 1986 con el beso de un matrimonio suizo. El conocido profesor de enología José Luis Pérez consideró como muy buenas las inmediaciones de la Venta d’Aubert y por tanto se decide plantar nuevas cepas, en suelo arcilloso/calcáreo bajo la influencia de un clima mediterráneo y semicontinental. La bodega se edificó en 1995, con las instalaciones técnicas necesarias y en el 2001 se amplió de acuerdo a las necesidades más modernas. Desde el 2022, la bodega y finca forman parte del proyecto de arquitectura contemporánea SOLO Houses. Primera colección de arquitectura de Europa que aúna varios mundos: una fina mezcla de arquitectura, arte y bienes naturales dentro de un marco de 200 hectáreas. La vinificación corre a cargo del enólogo Stefan Dorst desde 1998. Su larga experiencia internacional se refleja en el corte de los vinos de Venta d’Aubert, vinos de mucha profundidad, con personalidad diferenciada que muestran las características geoclimáticas del lugar en un ensamblaje de estilo internacional. En el 2022, el enólogo César Fernández entra a formar parte del equipo técnico de Venta d’Aubert. “Calidad ante todo” continúa siendo nuestra meta. Las notas de cata obtenidas por los vinos Venta d’Aubert en la guía española “Guía Peñin” y las distintas medallas de oro ganadas en concursos nacionales e internacionales de vinos ecológicos, nos muestran el reconocimiento de nuestro trabajo en la consecución de este objetivo.
