The Mondéjar Designation of Origin is located in the province of Guadalajara (southwest), it was created in 1997, it has an area of 700 hectares, about 3 wineries and 350 winegrowers. The average altitude of the vineyards is 800 meters. The soils are red limestone. The climate is Mediterranean, with an average annual temperature of 18º and rainfall of 500 mm per year.
The preferred and authorized white varieties in this D.O. They are Malvar, Macabeo, Torrontés, Sauvignon blanc, Moscatel and Verdejo.
The preferred and authorized red varieties in this D.O are Cencibel, Cab. Sauvignon, Syrah and Merlot.
The wines of this D.O. They have traditionally made red and white wines... Sweet white wine is also made in the area from the Malvar and Airén grapes. Oak-aged reds include a Cencibel Reserva. Most of the production, about 7,000 hectoliters, corresponds to young wines, mainly red wines made mainly from Tempranillo. However, the blend with Cabernet-Sauvignon promises excellent results. These are wines with an intense color and a certain astringency and tannicity.
The minimum percentages of alcoholic volume acquired in their wines are the following: White 10%, Rosé 11% and Red 11%.
