How are they made?
The freshly extracted musts are carefully prepared before fermentation to prevent oxidation and bacterial contamination, and to enhance the aromatic finesse of the future wines. After being filtered, the musts undergo a pH correction by adding tartaric acid. This correction not only helps prevent bacterial contamination during fermentation but also contributes to obtaining balanced and healthy wines, preparing them for subsequent aging.
Once the pH is adjusted, the must is treated with sulfur dioxide in doses that vary depending on the sanitary condition of the harvest, typically ranging between 60 and 100 mg/L. This treatment aims to prevent must oxidation and possible bacterial contamination. The dosage is commonly done in the form of gas, by direct injection into the circulation pipes. Subsequently, the must is "racked," removing its sediments through decantation. Once cleared of its turbidity, the must is finally transferred to fermentation tanks.
