The production of Dulce Nana involves a careful drying process of the clusters rigorously selected for this purpose. The high concentration of sugars resulting from this raisining process offers a sweet, dense and powerful wine.

Preparation: Manual harvest in 15 kg perforated boxes. Manual selection upon entry into the winery. The grapes are spread in a single layer on dry heather, protected from rain and in a very well ventilated place. Passification time = 2 months. Without destemming and pneumatic press. Spontaneous alcoholic fermentation with temperature control (12-15ºC). Clarification with isinglass. Tangential filtration.

Vineyard: Very healthy grape selection from young vineyards. Trellis (traditional pergola) with 800 vines/ha. Soils of granitic entisols of sandy-clayey character. Altitude from 0 to 100 meters.
