OSSIAN WHITE WINE 2010. Bottle of 0.7 L.

The year 2010 was characterized by a very dry winter and one of the wettest springs in recent years, with the last rain on 24 June.

These shoots were delayed and favored a major force in the vineyards. Veraison also delayed compared to regular dates. Had a dry summer and moderate temperatures, so that the phenolic maturation of grapes (accumulation of polyphenols) which progressed faster maturation alcohol (accumulation of sugars). This in itself is great for white wines, but in early October, the grapes were not fully mature so we had to wait, even at the risk of losing the crop if the rains had made its appearance. Fortunately, despite a slight frost, and start ripening harvest came on October 14 and can clean and harvest grapes with acidity levels extraordinarios.El health of the grapes were good, collecting all the harvest by hand and with great care.

GRAPE VARIETY
100% Verdejo, centuries old vines pre-phylloxera in ungrafted. The grapes come from our 17 hectares of vineyards themselves in Nieva (Segovia) with certified organically grown (without fertilizers synthesis or herbicides, or pesticides of any kind), plus another 13 hectares, also standing frank, we have leased and grown under our strict supervision.

PREPARATION
Manual harvest in boxes of 15 kg. Rigorous inspection selection table. Whole clusters, without stemmed and pressed very smooth, low performance, using only the yolk musts. Fermentation with indigenous yeasts themselves. After alcoholic fermentation the wine remained in French oak barrels - 40% new, 30% wine and 30% of two-to complete wines aged for nine months in Burgundian style, with bastoneo on its lees. BARRELS

All these processes have been carried out under the control and supervision of Pierre Millemann, a prestigious French winemaker who develops his work for years in Burgundy.
