The Cava Cygnus Albireo Brut Organic from Bodega 1+1=3 presents us with this Sparkling Wine from the Cava designation of origin (Spain), crafted from the grape varieties Xarello, Macabeo, and Parellada.

Bodega

This brut cava is made with the classic blend from Alt Penedès: Macabeo, Parellada, and Xarel·lo. These grapes also come from organically grown vineyards. The result is a sparkling wine with aromas of apple and ripe white fruit, with a fresh and balanced taste.

Although this winery was not founded until the year 2000, its origins date back 14 years earlier, when Josep Antoni Bonell and his wife Teresa began to dedicate themselves to the production of wines and cavas in Alt Penedès. The chosen location was the Masía Navines, located in Font-Rubi and owned by the family. Years later, Josep Antoni joined forces with Josep Piñol, with whom he shared the desire to produce cavas and organic wines true to the style of Alt Penedès. Thus, Josep Antoni and Josep have created their wines over the past two decades using the fruit of their organic vineyards and respectful production techniques.

Through them, they always aim to go one step further, and a good example of this is the name of the project; because one plus one couldn't just be two. And they achieved it.

Production

Being designated as Cava, it is crafted using the traditional Champagne method, without the addition of sugar and with second fermentation in the bottle. No sulfites are added in the production of the base wine. Additionally, it undergoes a minimum aging of 14 months on its lees. Dosage of 8.5 grams of sugar per liter.

It is an organic and vegan wine.

Excellent as an aperitif or with desserts, to be enjoyed alone or paired with foods such as seafood, nuts, cured cheeses, and cold cuts; during meals with fish or pasta with sauces; as a finale to a meal, and to accompany desserts, such as a Tarta de Santiago or pastries, even chocolate wouldn't go amiss.
