The Denominación de Origen Cava is found in 159 municipalities located in 7 autonomous communities. It is the only Denominación de Origen that covers production areas hundreds of kilometers away from one another, even more than 90% of which are developed in Cataluña. These municipalities are located in the districts of Barcelona (63), Tarragona (52), La Rioja (18), Lleida ( 12), Girona (5), Álava (3), Zaragoza (2), Navarre (2) and the Requena (Valencia) and Almendralejo. The Cava Regulatory Council was approved in November 1991.
It currently consists of 230 cava wineries and 158 base wine wineries, covering a vineyard surface area of 32,000 hectares, and a production of > 271 million kg of grapesin total. In a Mediterranean-type climate, with some production areas that are higher and cooler, looking over soils that vary according to the function of the processing area.
Processing the viñedos
The main grape varieties used in the preparation of cava are: Macabeo, Parellada and Xarello. Each time you bring Cava some characteristics that complement each other: the Macabeo brings sweetness and perfume, the Parellada brings finish, freshness and aroma, the Parellada brings refinement, freshness and aroma, strong>Xarello brings body and structure. Chardonnay and Pinot noir grapes are also used extensively. There are other secondary varieties, such as the Subirat Parent, also called Malvasía. For pink Cavas you can also use the black varieties Garnacha, Monastrell and Trepat.
The level of quality that the Cava has raised is fulfilled in the wine. The harvesting of the grapes, their conditioning and transport until the processing plants, is carried out with all care and with the maximum speed so that the time between the harvesting and obtaining of the must is the minimum possible.
