The Denomination of Origin Binissalem-Mallorca is located in the province of Mallorca, it was established in 1991, it groups 15 wineries with about 140 winegrowers, it has an approximate area of 620 hectares of vineyards. The Sierra de Alfabia or Tramuntana mountain range protects it from the cold northern winds, creating a benign microclimate. The climate can be described as mild Mediterranean, with dry, hot summers and short winters. The terrain corresponds to Quaternary continental sediments, giving rise to brown or brown-limestone soils that sometimes present calcareous crust horizons. The vineyards are located at an altitude that ranges between 75 and 200 meters.
The preferred and authorized white varieties in this D.O. They are Moll or Prensal Blanco, Moscatel, Parellada, Macabeu and Chardonnay.
The preferred and authorized red varieties in this D.O are Manto Negro, Callet, Tempranillo, Monastrell, Cab. Sauvignon, Merlot and Syrah.
The wines of this D.O. In white wines, the characteristics of the Moll variety grape predominate, which gives differential characteristics. They are wines with fruit aromas, green apple predominating and on the palate they are fresh wines, with a perfect balance between acid and sweet, and an appropriate slightly bitter finish. The red wines have their own characteristics, largely influenced by the native Manto Negro variety. They are wines with a not excessively intense color, with fruit aromas that evolve quickly towards jams. They are well structured wines and show adequate evolution in wood.
The minimum percentages of alcoholic volume acquired in their wines are the following: White 10.5% (50% Moll or Moscatel), Rosé 11%, Red 11.5% (50% black mantle), Sparkling 10.5 -13% (50% min moll, rest parellada, macabeo and chardonnay).
