HeVetusta red wine raised wine belongs to the D.O. Ribera del Duero and is composed of 100%Tempranillo grape. The grape comes from two vineyards, "Carrascalón" and "Haza", more than 20 years, located at 900 meters of altitude and with a production of 5,100 kg/ha. The harvest was performed in 15kg boxes. with a maximum time of one hour from the collection to the entrance in deposit.
ELABORATION: After the depiring, the grapes from our vineyard was chosen manually at the selection table to then be introduced without breaking into the deposits. The alcoholic fermentation with controlled temperature was carried out below 28ºC and a spontaneous malolactic fermentation. Once the malolactic was over, the wine was introduced into first and second year barrels of French oak (60%) and American (40%) for 14 months. Finally he rested in bottle for another 18 months until his departure.
Consumption: optimal temperature 14ºC to 16ºC
It is recommended to open the bottle and opt for an hour before tasting
