Obtained from ancient vineyards, fruits are selected in the vineyard, and then when they reach the winery before being transferred to open vats in order to start the first fermentation. First macerated cold, pre-fermentado for 4 - 7 days to 15 degrees before adding native yeasts. The wine is immersed three times a day carefully for 21 days on their skins before being pressed. Finally left ageing for 12 months in French oak barrels (29% new, 17% a year and the rest in more than two years). It is not filtered or clarified before bottling to help you have that complexity and integration of maturation.
