After this preferential maceration, the deposit temperature rose to 16ºC to initiate alcoholic fermentation. This fermentation was carried out with a controlled temperature between 28ºC and 31ºC. In addition to the 3 days of preferential maceration and the 8 days of fermentation, a 12 -day postfermentative maceration was performed. The wine was discovered by gravity only and got into a new barrel at a temperature of approximately 25 ° C to perform the malactic fermentation. The origin of the oak of the barrels used is from the center of France and the barrels are manufactured by the best barrels of France (Darnajou, Seguin Moreau, Tonnellerie Bordelaise) with a half plus roasted. Once this second fermentation is finished, the wine is shown and put into the same barrels to start the parenting process.
The 2002 Syrah Duraton has had 3 trasiegos to ensure optimal hygiene of oak containers during the 15 months of parenting. After a light clarified due to a long parenting, the wine was placed in Bordeaux bottle for later consumption. The 2002 Syrah duraton is a very intense wine at the aromatic and color and oxidation resistant level.
