The Castro Candaz Red Wine from Castro Candaz Winery presents this red wine from the D.O. Ribeira Sacra, made from 100% Mencía grape varieties.
This wine comes from vineyards from different plots cultivated on granitic and clay soils in the subzone of Lugo, Galicia. Viticulture is of the heroic type, that is, it is carried out at an average altitude greater than 500 meters and in places with an inclination greater than 30%.
The wine is fermented with all its stems, maintaining the maceration for a period of 2 months. The aging takes place in 500 liter barrels for 12 months. It is bottled without clarifying or filtering.
Recommended service temperature: Between 15 and 17ºC.
Castro Candaz
Castro Candaz is a joint project of the winemaker and winemaker Raúl Pérez with the winemaker Rodrigo Méndez in the Ribeira Sacra subzone of Lugo, using native grapes, resulting in wines with a marked Burgundian touch.
From a family originally from Valtuille de Abajo (Bierzo) and rooted in wine making, Raúl Pérez is today one of the greatest experts on the Mencía variety and in general of all those minority varieties that in very small quantities can be found in the north of Spain. In 2014 and 2016 he was chosen in Germany and Shanghai respectively as the most influential producer in the world.
Rodrigo Méndez also comes from a family dedicated to wine (Albariño). After several years of work, he has become one of the most restless producers.
The wines are basically made with Mencía and as is usual for both, the vinifications are very traditional, with very little extraction and seeking a long but very fresh style of wine.
