Juanjo Anchovies are always made based on the Cantabrian Bocarte, bought in Santoña and Ondarroa.
 
Anchovies Juanjo due to restrictions on fishing for anchovy in the Bay of Biscay and have begun with Mediterranean anchovies but following the same traditional production process.
 
Description of the production process of Juanjo Anchovies: raw material reception, cleaning, pre-salting brine, beheaded, gutted, Maturation, Kneading-cut and washed, drained, filleting and packaging, Addition of a liquid medium, Close and Storage.

TASTING NOTE

VIEW
Los filetes de anchoas en aceite de oliva presentan un aspecto brillante y apetitoso, con una coloración dorada y ligeramente rojiza que refleja la calidad del producto.
NOSE
El aroma es intenso y fresco, con una fragancia marina muy pronunciada. Se percibe el aceite de oliva que suaviza la intensidad del pescado, complementado por notas salinas que evocan la esencia del mar Cantábrico, de donde tradicionalmente provienen.
MOUTH
La textura es suave y delicada, pero firme al morder. El sabor es profundo, con un equilibrio perfecto entre lo salado y lo umami, típico de la anchoa de alta calidad.
