Elaboration

To make this gin, the distillation process of Tarquin's Cornish Dry Gin as a base is first carried out. To do this, 11 of the botanicals are added to the stills (with the exception of violets, strawberries and lime) and allowed to macerate overnight in a wheat-based neutral grain spirit. Before lighting the stills in the morning, the remaining botanicals are added to complete the recipe. As the stills heat up, Tarquin constantly monitors the process, sniffing and tasting the distilled spirit coming out of the still at different temperatures. Only the purest core of the distillation is taken (achieved when the still has reached the temperature of 78 ºC), and the 'heads' and 'tails' cuts (the first and last part of the distillation) are left aside. ) that do not have the most selective degree of texture and flavor.
