Palomo Cirial Mescal

Palomo Cirial Mescal is made with Cirial maguey (Karwinskii agave) that took 12 years to reach maturity. The wild agave used in this mezcal was traditionally cooked in an underground pit oven, ground with a horse-drawn tahona, and twice distilled in a copper still. The distillation system used was the copper still. This mezcal has unique citrus aromas and flavors that are lightly smoky with a bit of agave sweetness. The production region is in Santiago Matatlán, Oaxaca by the master mezcalero Carlos Méndez Blas. 

The Palomo Mezcal brand is registered under the name Del Buen Agave Company. Del Buen Agave is a meeting of producers from the "World Capital of Mezcal", Santiago Matatlán, Oaxaca. The manufacturers have worked together since 1930 and became a formal partnership in 2006. Mezcal Palomo was launched by them in 2013 with plans for wider distribution locally and internationally.
