What is Bacanora distillate?

Bacanora is a Mexican distillate originating from the state of Sonora, which is made from the Pacific agave or Agave angustifolia Haw. It is similar to tequila and mezcal, but has unique characteristics that distinguish it from these distillates.

Bacanora has a smoky and earthy flavor, with notes of fruit and spices. It can be consumed alone or mixed in cocktails. In Mexico, it has become a very popular drink in recent years, and has gained designation of origin, which means that it can only be produced in certain regions and under certain specifications to be labeled as Bacanora.

Production process:

The Bacanora production process begins with the harvest of the Pacific agave, which is cooked in earthen ovens for several days to soften the plant and allow the extraction of the sugars. It is then crushed and fermented with water to produce a fermented mash, which is distilled twice in copper stills.
