It was one of the first dairy farmers to become ecological and are currently the second largest ecological producers in Spain. The Queixo do Ecological Pilgrim Cured in barley, follow an ancient tradition of the pilgrims by covering the cheese with barley for conservation during their long way to Santiago. The Queixo do Ecological Pilgrim Cured in barley are made with pasteurized fresh milk following totally handmade methods and without any additive. The barley used helps both their conservation and to add a special aroma to this cheese. Cheeses are manually turned every two days. The maturation of the Queixo do Ecological Pilgrim Cured in barley occurs for 65 days, respecting the natural development of the molds on the cortex. The cured cheeses remain well between 5 and 10ş C., should never overcome the 15ş C. NOSE
En nariz, se perciben aromas lácteos frescos, con un fondo delicado de frutos secos y un toque sutil a cebada, lo que lo hace distintivo y muy característico de su proceso de curado artesanal.
MOUTH
En boca, la textura es suave y cremosa, con un sabor natural y equilibrado. El toque de cebada en la corteza aporta una dimensión extra al sabor, con un leve amargor que se combina perfectamente con las notas lácteas y de frutos secos.
