In 2002 the farm was certified Queixo Curing pilgrim Do Barley as ecological. It was one of the first dairy farms in becoming green and are currently the second largest organic producer in Spain.
 
The Queixo Do Curing Organic Barley pilgrim, follow an ancient tradition of pilgrims to cover the cheese with barley for preservation during long road to Santiago.
 
The pilgrim Do Queixo Cured in Barley Green are made with fresh pasteurized milk using methodology completely handmade and without any help aditivo.La barley used both conservation as adding a special flavor to the cheese. The cheeses are turned manually every two days.
 
Do Queixo maturation basking in Barley Green Cure occurs for 65 days, respecting the natural development of molds on the bark.
 
The cheeses are well maintained between 5 and 10 ° C., there must never exceed 15 ° C.
